Lemon Poppy Seed Muffins

3 c. flour
1 T. baking powder
1/2 t. baking soda
1/2 t salt
2 T. poppy seeds
10 T. butter, melted
1 c. sugar
2 eggs
1/2 c. heavy cream
1 c. sour cream
1 T. lemon zest
3 T. lemon juice
1 c. powdered sugar

Blend together in a large bowl flour, baking powder, baking soda, salt, sugar, lemon zest and poppy seeds. Make a well in the center and add butter, eggs, heavy cream and sour cream. Blend all together thoroughly. The dough will be sticky.

In a large or two small, greased muffin pans, fill each cup to the top with dough. Bake at 375 degrees for 25 minutes.

In a small bowl blend lemon juice and powdered sugar until the consistency is the way you like it (add more lemon juice if it is too thick). After pulling the muffins from the oven, ice them generously. Let slightly cool and enjoy!

I found this recipe on a website and substituted the cream and sour cream for plain yogurt in their recipe. We found that the muffins were huge, but Oh so tasty! So I would recommend the mini-muffin pans for a crowd.

German Potato Salad

7 slices bacon
1/4 c. onion, chopped
1 T. flour
1 T. sugar
3/4 t. salt
dash of pepper
1/4 c. chopped celery
1/4 c. vinegar
3 c. potatoes, sliced and cooked
1 T. parsley
1/2 c. water

Cook bacon until crisp; crumble. Cook onion and celery until tender. Blend in flour, sugar, salt and dash of pepper. Add vinegar and 1/2 c. water. Cook over medium heat and stir until thick. Add bacon and potatoes. Heath thoroughly. Serves 4. From my Sister in law, Carol.

Fudge Brownie Pie

2 eggs
1 c. sugar
1/2 c. butter, melted
1/2 c. flour
1/3 c. Hershey's cocoa
1/4 t. salt
1 t. vanilla
1/2 c. pecans, chopped
1/2 gallon vanilla bean ice cream
hot fudge sauce

Beat eggs in small bowl, blend in sugar and butter. Stir in flour, cocoa and salt. Then add vanilla and nuts. Pour into lightly greased and floured 8 inch pie pan. Bake at 350 degrees for 25-30 minutes. Cool and cut into wedges. Serve, topped with ice cream and hot fudge sauce.

Garlic Parmesan French Bread

1 loaf french bread, sliced
1 stick margarine
1/2 c. Parmesan cheese, grated
1/2 c. Monterrey jack cheese, grated
1 t. garlic
1 t. salt

Place sliced bread in aluminum foil, wrapping, so that only the top is showing. Place on a cookie sheet. In a glass measuring cup, melt butter in microwave, add in cheeses, garlic and salt. Blend together and pour over the bread, opening each slice and pouring a bit in.

Bake in the oven at 400 degrees for 10 minutes.

Blueberry Cheese Cake

1 1/2 c. graham cracker crumbs
1/2 c. melted margarine
4 T. sugar
1 bar (8 oz) cream cheese
1 c. powdered sugar
1 container cool whip
1 can blueberry pie filling

Mix together graham cracker crumbs, butter and sugar. Press into a pie plate. Refrigerate for 10 minutes.

Blend together cream cheese, cool whip, powdered sugar and pie filling. Pour into chilled crust. Refrigerate for one hour before serving.

Buttermilk Biscuits

2 c. flour (plus trace amount for counter surface)
4 t. baking powder
1 t. salt
1/2 c. shortening
1 c. buttermilk

Combine flour, baking powder and salt in a mixing bowl. Add shortening and mix with pastry blender (picture of one from Williams-Sonoma below) until it is "crumbly" in texture. Stir in buttermilk. Pat out to desired thickness on a floured surface. Cut with round cutter and place on a baking sheet. Bake at 400 degrees for 12 minutes.

Southern Style Whole Grain Pancakes

1 1/2 c. all-purpose flour
1 1/2 c. whole wheat flour
1 c. instant oats
2/3 c. cornmeal
3 T. sugar
2 T. baking powder
1 t. salt
6 eggs, separated
6 T. canola oil, plus 1/2 c. separated
3 c. buttermilk

Whip egg whites until stiff with a beater. Set aside. In a separate bowl mix together the flours, oats, cornmeal, sugar, baking powder and salt. In a smaller bowl blend the egg yolks, buttermilk and 6 T. oil, thoroughly.

Blend the buttermilk mixture with the dry ingredients completely. Gently fold in egg whites.

Heat 1/4 c. oil in griddle or large frying pan. (Add extra oil, as it gets dry). Cook the pancakes 1/2 c. at a time. Makes 16 pancakes. Serve with your favorite syrup!

Cinnamon-Sugar Popcorn

1 egg white, slightly beaten
½ c. sugar
1 tsp. cinnamon
¼ tsp. salt
2 quarts of air-popped popcorn (not microwave)

Mix together first 4 ingredients. Pour mixture over popped popcorn and be sure it is fully coated. Spread in a greased baking sheet. Bake for 20 minutes at 300º stirring frequently. Cool completely on paper towels before putting into an airtight container. Love this snack and make this for women’s retreats as well as a family snack! From my dear friend Dori.
** We add one stick of melted butter to the first part for more calories and buttery-goodness.

Stuffed Green Peppers

3 large green peppers
1 c. water
1 1/2 t. plus 1 t.salt, divided
1/2 lb. ground beef
1 can tomato sauce
1/2 c. cracker crumbs
1/4 t. pepper
2 T. sweet onion, finely chopped

Cut off stem of peppers, then wash and de-seed them. In a medium sauce pan, boil 1 c. water and 1 1/2 t salt over high heat. When boiling, add peppers and cook for 5 minutes. Drain peppers of all water.

In a mixing bowl, blend together ground beef, tomato sauce, cracker crumbs, 1 t. salt, pepper and onion. Divide and stuff into the three peppers, placing them right side up (hole at the top) in a baking dish. Cover with foil and cook for 45 minutes in a 350 degree oven. Remove foil and cook for 15 minutes more. Makes 3-4 servings.

King Ranch Chicken

1 large chicken fryer, cooked, de-boned and cubed (here is how I cook chicken)--save broth
1 large onion, chopped
1 large green pepper, chopped
1 pkg. corn tortillas
1/2 lb. cheddar cheese, grated
1 1/2 t. chili powder
1/4 t. garlic powder
1/2 t. salt
1 can cream of mushroom soup
1 can cream of chicken soup
1 can Ro*tel tomatoes with green chilies, crushed

In a large mixing bowl, combine chicken, 1 c. chicken broth, onion, green pepper, chili powder, garlic, salt, cream of mushroom soup, cream of chicken soup, and Ro*tel.

In a large baking dish, layer tortillas (softened by dragging them through the warm chicken broth first), chicken mixture and cheese. Layer three times and top with cheese. Bake at 350 degrees for 35 minutes. Serves 8. From my dear friend Dana's mom, Loretta, who is a pastor's wife.

Porcupine Balls

1 lb ground beef, uncooked
1/2 c. uncooked minute rice
1/2 c. milk
1/4 c. sweet onion, finely chopped
1 t. salt
1/4 c. celery, finely chopped
2 cloves garlic, finely minced
1/8 t. pepper
2 T. shortening or bacon drippings
2 cans tomato sauce
1 c. water
3 t. Worcestershire sauce

In a large mixing bowl, blend together beef, rice, milk, onion, salt, pepper, celery and garlic. Form into 8 medium balls.

Fry in a large frying pan on medium high heat, turning frequently until lightly browned on all sides. Place in a 9 1/2 X 13 baking dish.

Blend together in a bowl tomato sauce, water and Worcestershire sauce. Mix well and pour over meatballs. Cover dish and cook in 350 degree oven for 45 minutes. Serves 6. From my good friend, Dana's mom, Loretta--a pastor's wife.

Turkey Pot Pie

1/4 c. onion, chopped
1/2 c. celery, chopped
1/4 c. butter
2 c. plus 1/3 c. Bisquick baking mix, divided
2 T. shortening
3 c. milk
1 t. salt
1/2 t. pepper
2 c. chicken broth
2/3 c. light cream
4 c. turkey, cooked and diced
1 T. pimiento
1 t. Worcestershire sauce
scant amount flour for making crust

Grease a 9 1/2 X 13 inch baking dish. In a large frying pan melt butter. Sauté onions and celery over medium heat for 5 minutes. Combine 1/3 c. Bisquick with chicken broth in a separate container. Slowly stir into onion and celery mixture. Add turkey, salt, pepper, pimiento, Worcestershire sauce. Cook for 5 minutes over medium heat. Slowly blend cream into this mixture. Stir well and then pour into baking dish. Put baking dish into oven, as it preheats to keep it hot while you prepare the crust.

In a large bowl, combine 2 c. Bisquick, 2 T. shortening and 3 c. milk. Blend until a soft dough is formed. On a floured surface knead dough for about 2 minutes. Roll dough into an 9 1/2 X 13 inch rectangle, cutting three 1 inch slits in center. Place over hot filling.

Bake for 15 minutes at 450 degrees. From my dear friend, Dana's Mom, Loretta.

Golden Cream Soup

3 c. potatoes, peeled and diced
1 c. water
1/2 c. celery, chopped
1/2 c. carrot slices
1/4 c. chopped onion
1 t. parsley, chopped
1/2 t. salt
1/8 t. pepper
1 chicken bouillon cube
1 1/2 milk
2 T. flour
1/2 lb. Velveeta, cubed

Combine water, potatoes, celery, carrots, onion, parsley, salt, pepper and bouillon cube in a large stock pot. Cover and simmer for 20 minutes on medium high heat. Combine milk and flour in a separate container. Turn heat down to low and slowly add milk-flour mixture to soup until thick. Stir in Velveeta cubes and combine until melted. Butter Baked Carrots

1 lb. carrots
2 t. sugar
1 t. salt
1/8 t. pepper
4 T. margarine, melted


Cut carrots in small 3 inch long strips. Place in 9 1/2 X 13 inch baking dish. Sprinkle with sugar, salt, and pepper. Pour margarine over the top. Bake in oven at 400 degrees for 45 minutes (Can also microwave on high for 12-15 minutes). Serves 6. From my Sister in Law, Carol.

Spicy Oven Fried Chicken

1/2 c. corn meal
1/2 c. flour
1 1/2 t. salt
1 1/2 t. chili powder (may substitute 1 t. basil)
1/2 t. oregano
1/4 t. pepper
2-3 1/2 lb. chicken fryer with skin(or drumsticks, wings, thighs or breasts), thawed
1/2 c. milk
1/3 c. butter, melted
2 T. olive oil (or spray)

Spray a large baking dish with oil. Set aside.

Combine corn meal, flour and spices in a large bowl. Pour milk in a medium bowl. Dip chicken pieces in milk to coat both sides, then dip both sides in spice mixture. Place each piece skin-side up in baking dish. When complete, drizzle butter over the top.

Bake at 375 degrees for one hour.
