Shrimp Fondue

2 cans cream of shrimp
6 oz. sharp cheddar cheese
1/2 c. milk
2 cans shrimp
1/4 t. chipotle Tobasco sauce
1/2 c. white wine

In medium saucepan over medium low heat, blend together soup, shrimp, milk, Tobasco and white wine until heated through (about 8 minutes). Turn heat down to low and slowly stir in cheddar, stirring constantly until melted. May want to transfer to warm fondue pot or crock pot. Enjoy with crackers or chips (our favorite is Nabisco's Triscuit crackers--baked, whole grain wheat with fire-roasted tomato).

Morton's Favorite Green Beans

2 cans green beans (Italian style is our favorite)
2 pieces bacon cooked and crumbled, reserving bacon grease
2 T. bacon grease
4 T. minced onions
1 garlic clove minced
4 T. teriyaki sauce
1/2 t. salt
1/8 t. pepper

In a medium sauce pan, add beans, bacon grease, onions, garlic, teriyaki, salt and pepper. Cover and cook over medium low heat for 10 minutes until mixture is simmering. Serve in a casserole dish with bacon crumbles on top.

Spiced Carrots Polynesian

2 T. butter
1/2 c. pineapple juice
1 T. brown sugar
1/2 t. ground nutmeg
1/4 t. salt
1/8 t. white pepper
4 c. sliced carrots
1 medium onion, sliced in rings
2 T. fresh parsley

Melt butter in stock pot over medium heat. Add juice, brown sugar, nutmeg, salt, pepper, onions and carrots. Bring to a boil over medium high heat. When boiling, reduce heat to medium low, cover and simmer for 12 minutes longer. Transfer to a serving bowl. Sprinkle with parsley.

Mrs. Lamb's Potato Soup

4 potatoes, peeled and cubed
4 c. water
2 carrots, cut in small pieces
1/2 onion, diced
1 stick butter
1 can pet milk (evaporated milk)
1 t. salt
1/8. t black pepper, freshly ground

In a large stock pot bring water to a boil. Add potatoes, carrots and onions and boil for 20 minutes over medium high heat. Turn heat down to low and add butter and pet milk. Cook 5 minutes more before serving. May add garnish of green onions, shredded cheddar, bacon or freshly grated Parmesan cheese.

Swiss Vegetable Medley

1 - 16 oz. bag of frozen broccoli, carrots and cauliflower, thawed and drained
1 can cream of mushroom
1 c. Swiss cheese, shredded
1/2 c. sour cream
1/4 t. black pepper, freshly ground
1 small jar chopped pimientos
1 - 28 oz. can French fried onions

In a large bowl, combine vegetables soup, 1/2 c. cheese, sour cream pepper, pimientos and 1/2 can French fried onions. Blend together and pour into 1 qt. casserole dish. Bake covered in 350 degree oven for 30 minutes. Top with remaining cheese and onions. Bake uncovered 5 minutes longer.

Wonton Soup

6 chicken breasts
9 c. water
1 onion chopped
4 stalks celery, chopped
1 red bell pepper, chopped
2 t. salt
1 t. garlic pepper
2 garlic cloves, minced
1 t. basil
1/8 t. black pepper
8 sliced bacon, cooked
1 small carton mushrooms, sliced
1 pint baby spinach leaves
4 green onions, sliced
2 T. butter
1 package wonton wrappers
8 T. soy sauce

Boil chicken in water with onion, celery, red bell pepper, salt, garlic pepper, garlic cloves, black pepper and basil for 45 minutes in a large stock pot over medium high heat. Scoop out chicken with slotted spoon and let cool.

In a medium sauce pan, melt butter over medium heat. Add mushrooms and green onions. Sauté for 5 minutes and remove from heat. Add crumbled bacon to this mixture. Fold one spoonful into each wonton wrapper and fold in each side thoroughly.

Chop chicken and add to chicken broth in the stock pot. Also add the spinach. Heat over medium heat for 10 minutes more until hot and bubbly. Gently drop wontons into stock pot, one at a time. Cook 10 minutes more. Turn down heat to low and gently stir in soy sauce.
